Harvested by hand in successive sorting.

After a slow direct pressing, almost without re-draining, and a settling on the drained juices, the must is put directly into small tanks where the fermentations take place naturally during more than 20 months, without exogenous yeasts nor any oenological products except a little volcanic sulfur.

Cellaring : 8-10 years

This wine goes very well with raw fish or river fish with a creamy sauce. It can also be served with white meats in sauce (poultry, veal and pork), or with cooked cheeses.

Sables & Schistes 2020

Chenin with powerful notes of citrus and white flesh fruits. The mouth is straight and saline. A tension and a structure brought by a vintage marked by freshness.

Nice nose of yellow and white fruits with floral and dry herb notes. The palate is full, rich and complex with a saline finish. The wine is marked by a vintage of light and its concentration reveals a beautiful structure.

Notes of ground ginger enhance the yellow plum and Bosc pear flavors, while minerality and acidity come together to create a nice structure.
